4 slices Rye or 7-Grain Bread
Low Fat Mayonnaise
Spike Seasoning
1 Medium Avocado (Peeled, cut into ¼" slices)
1 Large Baked Potato (sliced into ¼" slices w/peeling)
4 Thin slices of Red Onion
¼ Green Bell Pepper cut into 1/8" strips
½ Cup Alfalfa Sprouts
½ Cup Mung Bean Sprouts Green Leaf or Romaine Lettuce
Spread each slice of bread with the mayonnaise.
Sprinkle generous amount of "Spike" seasoning on each slice of
bread. Layer all other ingredients on 2
slices of bread, in order. Top with
second slice of bread. Place four "long"
toothpicks in sandwich. Cut
sandwiches into four triangle pieces. Serve stacked on serving platter. Great party sandwiches.
